Description

A delicious and nutritious taco-flavored pasta dish packed with protein, perfect for a quick weeknight dinner.


Ingredients

  • 8 oz pasta (e.g., penne or rotini)
  • 1 lb ground turkey or beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup chicken or vegetable broth
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. In a large skillet, brown the ground turkey or beef over medium heat. Drain excess fat.
  2. Add the taco seasoning and 1 cup of broth to the skillet; stir well.
  3. Add the pasta to the skillet and cover with the salsa, black beans, and corn. Bring to a boil.
  4. Reduce heat and simmer, covered, for about 15-20 minutes, or until pasta is cooked and liquid is absorbed.
  5. Remove from heat and stir in shredded cheese until melted.
  6. Season with salt and pepper to taste, and garnish with chopped cilantro if desired. Serve warm.

Notes

For added flavor, include diced onions, bell peppers, or garlic while browning the meat. You can also make it vegetarian by using plant-based meat alternatives.
