  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 4 cups mixed greens
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 2 tbsp balsamic vinaigrette

Instructions

  1. Preheat oven to 400°F.
  2. Toss butternut squash with olive oil, salt, pepper, and garlic powder.
  3. Roast squash for 25 minutes until tender.
  4. Season chicken with salt and pepper, then grill or bake until fully cooked (165°F).
  5. Slice chicken into strips.
