A simple and hearty white chicken chili made in the crockpot.

  • 2 lbs boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chiles
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add beans, corn, green chiles, onion, garlic, chicken broth, cumin, oregano, salt, and black pepper.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. Remove chicken and shred it with forks.
  5. Return shredded chicken to the crockpot.
  6. Stir in sour cream and shredded cheese.
  7. Cook for an additional 10-15 minutes until cheese melts.
  8. Serve warm.

Notes

  • Use rotisserie chicken for quicker prep.
  • Adjust spices to taste.
  • Top with avocado, cilantro, or lime wedges.
